Chef’s hat
Tradition dictates that the head chef should wear the tallest hat with more junior or younger kitchen staff wearing a shorter hats or caps depending on their rank in the kitchen. The proper name is a toque blanche which is French for “white hat”, today this is often shortened to a toque.
Chef’s jacket
The traditional chef’s jacket is double breasted for a number of practical reasons as well as being professional and presentable. The double breast means that they are easily reversible to hide stains and also provide extra protection in the kitchen from heat and spillages. The chef’s jacket is usually adorned with knotted cloth buttons because they are more robust when it comes to frequent washing and contact with hot items.
Chef’s baggies
Chef’s trousers are well known in the catering industry as baggies. They are loose fitting for comfort and usually have a checkered pattern which is simply because the pattern helps to disguise stains.
The Neckerchief
Many years ago chefs would wear a neckerchief to mop up sweat from their faces when in the busy hot kitchen for hours on end. Of course with health & safety regulations changing this is not allowed so the neckerchief is mainly aesthetic and for tradition’s sake.
